Easy to make moist and healthy banana bread that your loved ones will eat in no time. You can even use it as a birthday cake.
1 ¼ cups (200g) wholemeal or spelt flour
½ cup (50g) hazelnut meal
2 tsp. baking powder
½ tsp. vanilla powder (optional)
3 ripe bananas, mashed
½ cup (200g) honey
200g dark chocolate
1 Tbsp. butter
2 Tbsp. chopped nuts
2 Tbsp. cacao nibs
1Preheat oven to 180ºC.
2Place all dry ingredients into a large bowl and blend well.
3Melt butter and honey in a small saucepan over a gentle heat.
4Add mashed bananas, eggs, melted honey and butter to dry ingredients and mix everything together.
5Pour mixture into a greased and lined loaf tin and bake for 60 minutes or until cooked and a skewer inserted into the centre comes out clean.
6Allow to cool in the tin for 15 minutes before turning out onto a wire rack to cool completely.
1Melt butter in a small saucepan over a gentle heat.
2Break chocolate into smaller pieces and add to butter. Stir gently until chocolate is smooth and shiny.
3Spread melted chocolate over top and sides of the cooled banana bread.
4Sprinkle with chopped nuts and cacao nibs.
CHEF TIP: The easiest way to mash bananas is to place them in a blender and puree until smooth.
