

Probiotic Basil Cucumber Soup

This is a wonderful way to use up your cucumbers and basil. Plus the powerful ingredients will supercharge your immune system.

Directions
1Wash cucumber thoroughly. Slice off both ends of the cucumber thinly and cut it into big chunks. (DO NOT remove skin and seeds!)
2Place all ingredients in a jug of a blender. Blend until smooth.
3Pour Soup into a bowl. Decorate the soup with some basil leaves.
HEALTH NOTE: Eating spicy food on a hot day will actually lower your body temperature by making you sweat. Once your moisture has evaporated, you will cool off. So enjoy this spicy soup especially in summer!
CHEF TIP: On a hot day you can chill the soup before eating. On a cold day you could warm this soup by gently heating in a saucepan on low heat, stirring frequently. Don't heat up the soup too much or you will destroy the probiotics.
VARIATION: If you don't have milk kefir, use natural yogurt instead.
